Yes, ‘modified’, for 6 years, we have been working with this ‘modified’ version of the classic Kalita Wave. It isn’t rocket science, rather pure logic. The Kalita shape provides us with the most stable and consistent brew especially among several people behind the bar. Until today, the original hole design at the bottom creates blockage and limits the grind size, meaning you cannot reach the maximum yields for each brew.
We simply changed that and came up with larger diameter on the holes to reach the same flow rate as a v60 but without the conical design and a consistent flat bottom instead. Lower your dose, grind finer and extract the maximum — it taste much better, simple as that.
